This will be the second dinner sponsored by Urban Food Market and we have selected the highly talented Craig Macindoe, Head Chef & Owner of MuMu Grill in Crows Nest to host this wonderful event! Duckfest2010 will be held on Wednesday 24th March 2010. COST: $59 per head or $95 per head with matching wines
The special dish of the night will be a 4 bird Turducken - Rolled (Turkey, Duck, Chicken & Guinea Fowl)! For those who don't know, a traditional Turducken consists of a partially de-boned turkey stuffed with a de-boned duck, which itself is stuffed with a small de-boned chicken. The word turducken is a portmanteau of turkey, duck, and chicken or hen. Craig is taking this dish a couple of steps further, firstly by adding another bird, Guinea Fowl and then instead of the traditional stuffing of each bird into the larger bird and keeping the form of the largest bird, the Turkey, he will be completely de-boning and flattening, then layering, stuffing and rolling the birds.
